How To Make Spinach, Blue Cheese & Walnut Muffins

Ingredients
- 2 cups fresh spinach, chopped
- 1 cup crumbled blue cheese
- 1 cup walnuts, chopped
- 1 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs
- 1 cup milk
- 1/4 cup melted butter
Instructions

Preheat the oven to 375°F (190°C) and grease a muffin tin.

In a large mixing bowl, combine the chopped spinach, crumbled blue cheese, and chopped walnuts.

In a separate bowl, whisk together the flour, baking powder, salt, and black pepper.

In another bowl, beat the eggs, then stir in the milk and melted butter.

Pour the wet mixture into the dry mixture and stir until just combined.

Fold in the spinach, blue cheese, and walnuts mixture until evenly distributed.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Allow the muffins to cool for a few minutes in the tin, then transfer them to a wire rack to cool completely.
